Onion Rice Pilaf

Ingredients

  • 1/2 small onion, chopped
  • 1 tbsp. butter
  • 1 cup uncooked rice
  • 1 1/2 cups chicken broth

Directions

  1. Heat butter in a skillet over medium-high heat. Stir in the onion, and cook until soft and translucent.
  2. In a small saucepan, combine rice, onions, and broth. Bring to a boil over high heat.
  3. Reduce heat to low, cover, and simmer for 30 minutes.
  4. Remove from heat, let cool, and fluff with a fork.
