Tabbouleh with Quinoa

Ingredients

  • 1 1/2 – 2 cups cooked quinoa
  • Juice of 2-3 lemons
  • 3 medium tomatoes, diced
  • 6 green onions, thinly sliced
  • 3 bunches of parsley, finely chopped
  • Handful of mint, finely sliced
  • 1/2 cup extra virgin olive oil
  • salt to taste

  1. Combine all ingredients.
