Ingredients
- 1 1/2 – 2 cups cooked quinoa
- Juice of 2-3 lemons
- 3 medium tomatoes, diced
- 6 green onions, thinly sliced
- 3 bunches of parsley, finely chopped
- Handful of mint, finely sliced
- 1/2 cup extra virgin olive oil
- salt to taste
