Blender Pao de Queijo (Brazilian Cheese Bread)

Ingredients

  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 cups tapioca flour
  • 1 teaspoon salt, or to taste
  • 2 eggs
  • 1 cup freshly grated parmesan cheese

Directions

  1. Preheat oven to 350 degrees F.
  2. Combine all the ingredients in the jar of a blender and pulse until smooth. Pour the batter into two mini muffin tins (or one big tin), lightly greased or sprayed with cooking spray.
  3. Bake for 15-20 minutes or until puffed and golden brown.
  4. Let them cool slightly and serve warm.

Note

  • To reheat from frozen, set oven to 400 degrees F and heat for 5 minutes.
