Ingredients
- 6 Persian cucumbers (or 3 english cucumbers)
- 2 garlic cloves, minced
- 1 tablespoon crunchy peanut butter
- 2-3 tablespoons rice vinegar (you may wish to use less)
- 3 tablespoons soy sauce
- 1/2 tablespoon sesame oil
- 1 teaspoon sriracha
- Sugar-free sweetener (optional)
Directions
- Thinly slice cucumber by hand or with a mandoline.
- Combine all other ingredients and adjust dressing to taste.
- Toss cucumbers with dressing, and serve immediately.
