Cucumber Pickles (Kyuri no Shiomomi)

Ingredients

  • 10 oz. english cucumbers, thinly sliced
  • 3 1/2 oz. cabbage, finely shredded
  • 1/2 inch piece peeled fresh ginger, cut into fine matchstick strips
  • 1 1/2 tsp. salt
  • Sesame seeds, for garnish

Directions

  1. In a bowl, gently mix all ingredients except sesame seeds.
  2. Cover with plastic wrap, pressing it down on the surface of the ingredients. Fill a smaller bowl with water, and place on covered ingredients to apply weight. Let stand for 1 hour.
  3. Remove bowl of water, and drain liquid from cucumber pickles. Garnish with sesame seeds and serve.
