1/2 inch piece peeled fresh ginger, cut into fine matchstick strips
1 1/2 tsp. salt
Sesame seeds, for garnish
Directions
In a bowl, gently mix all ingredients except sesame seeds.
Cover with plastic wrap, pressing it down on the surface of the ingredients. Fill a smaller bowl with water, and place on covered ingredients to apply weight. Let stand for 1 hour.
Remove bowl of water, and drain liquid from cucumber pickles. Garnish with sesame seeds and serve.
