Cucumber Raita

Method 1

Ingredients

  • 1/2 cup minced fresh mint leaves
  • 1 cucumber, peeled, seeded, and grated
  • 3 cups plain yogurt, strained
  • Salt to taste

Directions

  1. Combine all ingredients.

Method 2

Ingredients

  • 2 hot house cucumbers, peeled, seeded, and thinly sliced
  • 2 cups greek yogurt
  • 3 tbsp. lemon juice
  • 2 tbsp. chopped fresh mint
  • 1/2 tsp. white sugar
  • 1/4 tsp. salt

Directions

  1. Stir together all ingredients. Cover and refrigerate at least 3 hours, preferably overnight.
