Several week old eggs – eggs that are older are easier to peel once cooked.
Cold water
Directions
Add eggs to a deep pan with at least 1-2″ of cold water to cover.
Turn up heat to high, and bring eggs to a rolling boil.
Once eggs are at a high rolling boil, turn off the burner and cover the pan. Let sit for 12-15 minutes.
Immediately remove eggs with a slotted spoon into an ice bath. The ice bath shocks the membrane that separates the egg from the shell, and will gradually relax it away from the egg itself.
