Mashed Potatoes

Crockpot Mashed Potatoes

Ingredients

  • 5 lbs. potatoes, cooked, peeled, and mashed
  • 8 oz. cream cheese, softened
  • 1 1/2 cups sour cream
  • 3 tsp. onion or garlic salt
  • 1 1/2 tsp. salt
  • 1/4 – 1/2 tsp. pepper
  • 2 tbsp. butter, melted
  • 1 1/2 cups shredded cheddar cheese (optional)
  • Paprika (optional)

Directions

  1. Combine all ingredients and pour into slow cooker.
  2. Cover. Cook on low 5-6 hours.

Note

These potatoes may be prepared 3-4 days in advance and kept in the refrigerator until ready to use.

Variations

  • Add 1 1/2 cups shredded cheddar cheese to step 1.
  • Sprinkle with paprika before cooking.

Mom’s Mashed Potatoes

Ingredients

  • Potatoes, peeled and cut into 1/2 inch cubes
  • Milk or half-and-half
  • Butter
  • Salt and pepper

Directions

  1. Bring a large pan of water to a boil. Add peeled and cubed potatoes and boil until tender.
  2. When tender, drain out all excess water. Using a hand masher, pulverize potatoes. Add salt and pepper to taste.
  3. Slowly add milk until potatoes take on the correct consistency. Use an electric blender to smooth out lumps.
  4. Slowly add melted butter until flavor is consistent with Mom’s mashed potatoes. Salt and pepper to taste.
  5. When reheating in microwave, add a little milk.
