Crockpot Mashed Potatoes
Ingredients
- 5 lbs. potatoes, cooked, peeled, and mashed
- 8 oz. cream cheese, softened
- 1 1/2 cups sour cream
- 3 tsp. onion or garlic salt
- 1 1/2 tsp. salt
- 1/4 – 1/2 tsp. pepper
- 2 tbsp. butter, melted
- 1 1/2 cups shredded cheddar cheese (optional)
- Paprika (optional)
Directions
- Combine all ingredients and pour into slow cooker.
- Cover. Cook on low 5-6 hours.
Note
These potatoes may be prepared 3-4 days in advance and kept in the refrigerator until ready to use.
Variations
- Add 1 1/2 cups shredded cheddar cheese to step 1.
- Sprinkle with paprika before cooking.
Mom’s Mashed Potatoes
Ingredients
- Potatoes, peeled and cut into 1/2 inch cubes
- Milk or half-and-half
- Butter
- Salt and pepper
Directions
- Bring a large pan of water to a boil. Add peeled and cubed potatoes and boil until tender.
- When tender, drain out all excess water. Using a hand masher, pulverize potatoes. Add salt and pepper to taste.
- Slowly add milk until potatoes take on the correct consistency. Use an electric blender to smooth out lumps.
- Slowly add melted butter until flavor is consistent with Mom’s mashed potatoes. Salt and pepper to taste.
- When reheating in microwave, add a little milk.
