Ingredients
- 1 2-inch piece fresh ginger
- 6 cups water
- 7 tablespoons white miso
- 6 large shiitake mushrooms, stemmed, thinly sliced (about 4 cups)
- 2 green onions, thinly sliced
- 3/4 teaspoon tamari soy sauce
Directions
- Finely grate ginger and place in paper towel. Squeeze to release juice, set aside.
- Whisk together water and miso in a small saucepan.
- Add mushrooms and green onion and simmer, but do not boil.
- Add ginger juice and soy sauce, and cook for 30 seconds.
