Miso-Ginger Consomme

Ingredients

  • 1 2-inch piece fresh ginger
  • 6 cups water
  • 7 tablespoons white miso
  • 6 large shiitake mushrooms, stemmed, thinly sliced (about 4 cups)
  • 2 green onions, thinly sliced
  • 3/4 teaspoon tamari soy sauce

Directions

  1. Finely grate ginger and place in paper towel. Squeeze to release juice, set aside.
  2. Whisk together water and miso in a small saucepan.
  3. Add mushrooms and green onion and simmer, but do not boil.
  4. Add ginger juice and soy sauce, and cook for 30 seconds.
