Mix all ingredients together in a bowl and allow to rise at room temperature for an hour.
Loosely cover bowl, and refrigerate overnight.
Remove from refrigerator on the next day and allow to rise for another hour. Preheat oven to 450 degrees with a dutch oven or pan (with another pan of water) inside.
When dough has risen a second time, remove the preheated pan from the oven. Place flour or corn meal in the bottom of the pan, and place dough inside the pan.
If using a dutch oven, cover the pan and bake for 45 minutes. If not using a dutch oven, leave uncovered, as the pan of water will steam the bread.
