In a ceramic mortar/pestle, add garlic & chilies. Pound to mash, then add long beans.
Pound a few more times, then add a pinch of papaya. This helps mix garlic and chiles. Pound some more.
Add palm sugar and fish sauce, and pound until well mixed.
Add tomato and pound lightly. Add lime juice, dried shrimp, and remaining papaya. Pound 10-15 times while mixing with a spoon. You want to coat the papaya and pound flavor into it, but not pulverize it.
