Papaya Salad

Ingredients

  • 1 tsp. whole garlic
  • 2-10 small thai chiles, to taste
  • 1 tbs. palm sugar
  • 1 tbsp. fish sauce, or 1/2 tsp. sauce
  • 1 long bean, broken into 1.5″ pieces
  • 1 tomato, chopped into large pieces
  • 2 tsp. lime juice
  • 1 cup shredded green papaya
  • 3 tbsp. dry roasted peanuts
  • 1 tbsp. dried shrimp

Directions

  1. Peel papaya and shred.
  2. In a ceramic mortar/pestle, add garlic & chilies. Pound to mash, then add long beans.
  3. Pound a few more times, then add a pinch of papaya. This helps mix garlic and chiles. Pound some more.
  4. Add palm sugar and fish sauce, and pound until well mixed.
  5. Add tomato and pound lightly. Add lime juice, dried shrimp, and remaining papaya. Pound 10-15 times while mixing with a spoon. You want to coat the papaya and pound flavor into it, but not pulverize it.
  6. Add peanuts, mix and serve.

Note

  • The papaya must stay crunchy!
