Ingredients
- 1.5-2 lb. skirt steak
- 1/4 cup fresh lime juice
- 1/4 cup brown sugar (packed)
- 1/4 cup cilantro leaves (packed)
- 2 Tb. canola oil, or other high-temperature oil
- 2 Tb. fish sauce
- 1 1/2 Tb. ancho chile powder
- 3 garlic cloves (peeled)
- 1 habanero pepper (stem removed), or other hot pepper
- 2 tsp. ground cumin
- 1 tsp. salt
Directions
- With a fork, pierce the skirt steak evenly on both sides.
- Place remaining ingredients in Vitamix and puree until smooth.
- Marinate steak for at least 15 minutes at room temperature.
- Once marinated, sear steak for 3 minutes per side.
- Allow to rest for 5 minutes.
