Rice with Lime and Cilantro

Ingredients

  • 2 tbsp. vegetable oil
  • 1 small onion, chopped
  • 3 garlic cloves, chopped
  • 1 cup long grain rice
  • 2 cups vegetable or chicken broth
  • 1 lime, juiced
  • 1 tbsp. chopped fresh cilantro

Directions

  1. Heat oil in a heavy saucepan. Add onion and garlic and cook gently, stirring occasionally, for 2 minutes.
  2. Add rice and cook for a minute, stirring occasionally.
  3. Pour in the broth, increase the heat, and bring rice to a boil. Reduce heat to a very low simmer.
  4. Cover and cook rice for about 10 minutes or until it is just tender and the liquid is absorbed.
  5. Sprinkle in lime juice and fluff rice with a fork.
  6. Sprinkle with chopped cilantro and serve immediately.
