Ingredients
- 2 tbsp. vegetable oil
- 1 small onion, chopped
- 3 garlic cloves, chopped
- 1 cup long grain rice
- 2 cups vegetable or chicken broth
- 1 lime, juiced
- 1 tbsp. chopped fresh cilantro
Directions
- Heat oil in a heavy saucepan. Add onion and garlic and cook gently, stirring occasionally, for 2 minutes.
- Add rice and cook for a minute, stirring occasionally.
- Pour in the broth, increase the heat, and bring rice to a boil. Reduce heat to a very low simmer.
- Cover and cook rice for about 10 minutes or until it is just tender and the liquid is absorbed.
- Sprinkle in lime juice and fluff rice with a fork.
- Sprinkle with chopped cilantro and serve immediately.
