Rotel Rice (large batch)

Ingredients

  • 2 1/2 cups uncooked short grain rice, rinsed and drained
  • 1 8oz. can Rotel, with tomato juice
  • 2 1/2 cups vegetable broth (add in chicken/tomato bouillon as needed/preferred)

Directions

  1. Drain Rotel, reserving liquid.
  2. Add vegetable broth/water to Rotel tomato juice to equal 3 cups of liquid.
  3. Combine rice, Rotel tomatoes, and liquid in large saucepan. Cover and bring to a boil.
  4. Reduce heat to lowest setting and simmer for 20 minutes, without opening lid.
  5. Turn off heat and let rest for 10 minutes to check for doneness and liquid remaining in pot.  If still moist, steam for another 5 minutes at a time.
  6. Fluff rice with a fork before serving

Note

  • Frozen peas or corn may be added at step 3 if desired.
