Method One
Ingredients
- 1/4 cup dark soy sauce
- 1/4 cup sake
- 2 tbsp. mirin
- 1 tbsp. white sugar
Directions
- Combine soy sauce, sake, mirin, and sugar in a small saucepan over medium heat, until sugar is dissolved
- Can be used immediately, or cooled and refrigerated.
Method Two
Ingredients
- 1 cup soy sauce
- 1 cup sake
- 1/2 cup mirin
- 1/4 cup brown sugar
- 2 tbsp. fresh ginger, grated
Directions
- Combine all ingredients in a saucepan. Heat until brown sugar is dissolved.
Method Three
Ingredients
- 1/2 cup soy sauce
- 2 tsp. dark sesame oil
- 2 oranges, juiced
- 2 tbsp. honey
- 2 tbsp. ginger, peeled and minced
- 1/2 cup scallion, chopped
- 2 tsp. garlic, minced
- 2 tsp. sesame seeds, toasted
Directions
- Combine all ingredients in a large bowl, and refrigerate for up to one hour.
Note
- May also be used as a marinade for chicken, shrimp, or beef.
