Ingredients
- 2 cups flour
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup dried currants or cranberries
- 1/4 cup brown sugar, finely packed
- 1 tsp. lemon zest
- 2 tbsp. margarine, softened
- 1 cup soy milk
Directions
- Preheat oven to 400 degrees.
- Mix flour, baking powder, and salt in a large bowl. Add currants or cranberries, brown sugar, and lemon zest.
- Cut margarine into mixture using two forks. Mix until crumbly.
- Add soy milk, mixing quickly and lightly.
- Drop teaspoonfuls onto greased cookie sheet. Bake 12-15 minutes, or until cookies have browned around the edges.
