Vegan Currant Cookies

Ingredients

  • 2 cups flour
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup dried currants or cranberries
  • 1/4 cup brown sugar, finely packed
  • 1 tsp. lemon zest
  • 2 tbsp. margarine, softened
  • 1 cup soy milk

Directions

  1. Preheat oven to 400 degrees.
  2. Mix flour, baking powder, and salt in a large bowl. Add currants or cranberries, brown sugar, and lemon zest.
  3. Cut margarine into mixture using two forks. Mix until crumbly.
  4. Add soy milk, mixing quickly and lightly.
  5. Drop teaspoonfuls onto greased cookie sheet. Bake 12-15 minutes, or until cookies have browned around the edges.
